Consumer concerns regarding food safety can have substantial impacts on their consumption patterns. Thus, understanding consumer response to food safety information is important for quantifying consumer response to food safety events, predicting market impacts, and developing appropriate risk communication strategies. Flexible demand systems have gained much popularity in analyzing effects of food safety outbreaks on consumer demand because of their ability to capture interactions between the demand for substitutable and complementary goods. De Gustibus Asparagus: Habits, Trade, and Welfare from Out of Season Imports of Fresh Vegetables AgEcon

Fresh vegetables, including asparagus, are now available in months outside of the domestic growing season for most U.S. consumers. We use the virtual price method to calculate the equivalent variation for increased availability in a demand system for fresh and frozen vegetables and find that virtual price of out-of-season asparagus is roughly 3 times higher than its in-season price in years prior to year round availability. We find the equivalent variation between 1986-1991 (when asparagus was available approximately half the year) and 1993-1999 (when it was available year round) to be 0.91 of consumer vegetable budgets, implying a welfare benefit of approximately $86 million annually. Effects of Container Size on Overconsumption of Carbonated Soft Drinks AgEcon

We take a structural approach to examine the effects of larger container size on consumption of carbonated soft drinks---using Nielsen Company's Homescan data on household purchases for the years 2004 through 2006. Our results show that by removing the price discount implicit in packages with larger container size, the average unit price the two households pay for CSD products increase and hence both households (both the low income and the high income) reduce their annual consumption of soft drinks by about 75%. This reduction is due to a combination of reduced number of purchases and switching to products with less number of bottles/cans.

Food Safety and Habits in U.S. Meat Demand under Rational Expectations AgEcon

A consumer life-cycle demand system is built to investigate the presence of rational habits and the effects of food safety information on U.S. meat consumption. Information extracted from the popular press coverage of food safety events is used to approximate consumers' "true" perception of food safety. At quarterly frequencies, U.S. meat demand is found to be intertemporally nonseparable. During the post-1998 period, habit persistence is found to dominate inventory adjustment in beef demand. LONG-RUN EFFECTS FROM CONSUMER REACTION TO THE SPREAD OF FOODBORNE PATHOGENS: THE CASE OF E. COLI CONTAMINATION OF BEEF AT JACK IN THE BOX RESTAURANTS AgEcon

Using news coverage of food safety as an indicator of public attention to food pathogen issues in meat products, we found the 1993 E. coli O157:H7 contamination of hamburgers likely permanently changed consumers' perception of beef safety. A food consumption model with rational habit persistence is developed to examine whether consumers make forward-looking consumption decisions accounting for expectations of future food safety. We document clear evidence of forward-looking consumption behavior, which suggests that government regulations implemented subsequent to the 1993 event to protect consumers from ignorance or cognitive defects may be ineffective.

Meat Demand under Rational Habit Persistence AgEcon

The objective of this paper is to explore the theoretical implications of a meat demand model with rational habits. To introduce consumption dynamics, habit persistence is used to motivate intertemporally related preferences. The impact of food safety information on meat consumption is systematically analyzed. Important differences between myopic habits and rational habits are outlined.

The Effects of Avian Influenza News on Consumer Purchasing Behavior: A Case Study of Italian Consumers' Retail Purchases AgEcon

To better understand how information about potential health hazards influences food demand, this case study examines consumers’ responses to newspaper articles on avian influenza, informally referred to as bird flu. The focus here is on the response to bird flu information in Italy as news about highly pathogenic H5N1 avian influenza (HPAI H5N1) unfolded in the period October 2004 through October 2006, beginning after reports of the first outbreaks in Southeast Asia and extending beyond the point at which outbreaks were reported in Western Europe. The Impact of Pork Advertising on US Meat Demand in the Presence of Competing Beef Advertising and Food Safety Events AgEcon

We examine the effects of domestic advertising and promotion expenditures on meat demand, extending previous efforts in several areas, including the use of more recent data, employing a complete demand system and simultaneously measuring the impacts of generic pork and beef advertising and food safety information on the demand for beef, pork, and poultry. Using the Generalized Almost Ideal Demand System (GAIDS), own- and cross- beef and pork advertising and own- and cross- beef, pork, and poultry food safety effects are measured jointly and consistently. The Value to Consumers of Health Labeling Statements on Breakfast Foods and Cereals AgEcon

Food manufacturers have an incentive to include nutrient content claims, health claims, or other types of labeling statements on foods if they believe that consumers will be willing to pay more for products with specific attributes. We estimated semi-log hedonic price regressions for five breakfast bar and cereal product categories using Nielsen ScanTrack scanner data for 2004 and found that labeling statements for these foods are often associated with substantial increases in consumer willingness to pay. The largest effects were associated with “carb-conscious” carbohydrate labeling (reflecting the time period of the data), followed by fat and sugar content labeling statements.
